Russian Okroshka Soup

Okroshka is a traditional Russian soup that is served cold. I made a raw version to try for my mum and she fell in love with it! In fact, she's been making it herself everyday since trying it. Will you also fall in love with it? Give it a try!
Ingredients
  • 1 medium cucumber, peeled
  • ½ bell pepper, de-seeded
  • 1 tablespoon chopped radish
  • ¼ cup coconut flesh (you can also use dried dessicated coconut)
  • ¼ avocado
  • 1 cup coconut water (preferably fresh, but pausterised can also be used)
  • 1 tablespoon lime or lemon juice
  • ¼ cup freshly chopped dill or 1 tablespoon of dried dill
Instructions
  1. Pour coconut water into a soup bowl
  2. Chop cucumbers and bell pepper into small pieces
  3. Chop avocado and coconut flesh into small bits
  4. Add the chopped ingredients to the soup bowl with coconut water
  5. Add the lemon or lime juice
  6. Sprinkle with chopped dill
  7. Serve and enjoy!
