Grated zucchini salad with greens and creamy avocado dressing

- 2 medium zucchinis (peeled)
- 2 cups chopped lettuce
- 1 cup chopped arugula
- 1 cup baby spinach
- 2 medium tomatoes
- ½ soft avocado
- the juice of 1 orange
- 1 teaspoon cumin
- ¼ cup chopped dill
- Grate the zucchinis and place them into a bowl.
- Add the lettuce, ½ cup arugula and baby spinach.
- Chop the tomatoes and place them into a bowl.
- Blend together the juice of 1 orange, avocado, cumin and dill into a dressing.
- Pour over the salad.
- Sprinkle with more chopped arugula and serve!
