Vegan Sweet Potato Soup Recipe

Serves: 3-5
- 3 cups sweet potatoes
- 2 cups cabbage
- 1 grated beetroot
- 1 cup frozen green peas
- ½ chopped leek
- 2 medium tomatoes, chopped
- Freshly chopped corriander or dill (or both!)
- Place the sweet potatoes and beetroot in a large cooking pot
- Cover with 4-5 cups of clean water
- Bring to the boil and boil for 3-4 minutes
- Add the cabbage, peas and leek and boil (3-5 minutes, depending on how crunchy you like your veggies)
- Turn the stove off and add freshly chopped tomatoes to the soup
- Cover the pot and let it stand for a few minutes
- Add the fresh herbs
- Serve and enjoy!
