Tahini-Beet Salad

- ½ pound (225g) fresh lettuce
- 1 cup fresh tomatoes, any variety
- 1 medium sized zucchini, peeled
- 1 medium sized cucumber
- 1 medium sized beetroot, peeled
- ½ tablespoon tahini
- 1 sprig of dill
- 2 tablespoons lemon or lime juice
- Chop up the lettuce and place it into a medium sized bowl
- Grate the zucchini and add to lettuce
- Cut the cucumber and place in the bowl
- Chop the beetroot
- Blend together the tomatoes, tahini, chopped beetroot, and lime/lemon juice until smooth
- Pour the sauce over the lettuce, grated cucumber and zucchini and mix together well.
- Decorate with chopped dill
- Serve and enjoy!
