Tahini-Beet Salad

  • ½ pound (225g) fresh lettuce
  • 1 cup fresh tomatoes, any variety
  • 1 medium sized zucchini, peeled
  • 1 medium sized cucumber
  • 1 medium sized beetroot, peeled
  • ½ tablespoon tahini
  • 1 sprig of dill
  • 2 tablespoons lemon or lime juice
  1. Chop up the lettuce and place it into a medium sized bowl
  2. Grate the zucchini and add to lettuce
  3. Cut the cucumber and place in the bowl
  4. Chop the beetroot
  5. Blend together the tomatoes, tahini, chopped beetroot, and lime/lemon juice until smooth
  6. Pour the sauce over the lettuce, grated cucumber and zucchini and mix together well.
  7. Decorate with chopped dill
  8. Serve and enjoy!
