Vegan Toddler Visits Pick Your Own Farm In England + A Salad Recipe!

Today we’ve got a fun video for you with us and our vegan toddler visiting a pick your own farm in Herefordshire, England.

Our vegan toddler Elanie loved collecting and eating cherries, raspberries, gooseberries, carrots, beetroot and peas.

Taking your kids to pick your own farms is a great opportunity to show them how plants grow and explain the benefits of the fruit and veg lifestyle.

They will see where their food comes from and get an opportunity to collect it, as well as eat it!

After we got back home, it was time to prepare a delicious salad for us all and we wanted to share a recipe with you.

Grated zucchini salad with greens and creamy avocado dressing

Grated zucchini salad with greens and creamy avocado dressing

Fresh and fragrant grated zucchini salad with greens and creamy avocado dressing.
Ingredients
  • 2 medium zucchinis (peeled)
  • 2 cups chopped lettuce
  • 1 cup chopped arugula
  • 1 cup baby spinach
  • 2 medium tomatoes
  • ½ soft avocado
  • the juice of 1 orange
  • 1 teaspoon cumin
  • ¼ cup chopped dill
Instructions
  1. Grate the zucchinis and place them into a bowl.
  2. Add the lettuce, ½ cup arugula and baby spinach.
  3. Chop the tomatoes and place them into a bowl.
  4. Blend together the juice of 1 orange, avocado, cumin and dill into a dressing.
  5. Pour over the salad.
  6. Sprinkle with more chopped arugula and serve!
